Ingredients
- 1 cup gluten-free oats
- 2/4 cup coconut dried
- 1/3 cup brown rice flour
- 1/3 cup oat flour
- 1/3 cup potato starch
- 3/4 cup sugar
- 1/4 cup Brown Sugar
- 1 teaspoon baking soda
- 1/3 cup butter
- 1 Tablespoon honey
- 2 Tablespoons boiling water

Preheat the oven to 350 degrees and grease a baking sheet with parchement.

Mix together the oats, coconut, brown rice flour, oat flour, potato starch, sugar, brown sugar, baking soda in a large bowl and stir to combine.

In a small saucepan, melt the butter and honey together. Add the boiling water and stir to combine. Pour into the oat mixture and mix well.

Drop by teaspoon onto prepared baking sheet and bake for approximately 15 minutes,until browned. Remove from oven and cool them on a cooling rack.
