Butterscotch bars with chocolate chips

  • 1/2 cup butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups plain flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup shredded coconut
  • 1 cup chocolate chips


  1. In a saucepan melt the butter over low heat.

  2. Remove pan from heat and stir in brown sugar.

  3. Add the eggs, one at a time beating well after each addition.

  4. Stir in the vanilla

  5. Sift together dry ingredients, add with coconut and chocolate chips to brown sugar mixture.Mix thoroughly

  6. Spread in greased baking pan.

  7. Bake at 350 F for about 25 minutes.

  8. Cut in bars while warm and let it cool outside the pan.
