  • 1/2 lb carrots
  • 3 tablespoons sugar
  • 2 tablespoons margarine
  • 5 tablespoons self-raising flour


  1. Pre heat oven gas mark 4 or 350F

  2. Cream together the margarine and 90% of the sugar

  3. Grate the carrot and beat it into the margerine and sugar

  4. Fold in the flour lightly unjtil the dough is soft and creamy. Add a tablespoons ofwater is mixture is very dry.

  5. drop spoonfuls of the mixture into the greased patty peans sprinkle the tops with remainder of sugar and put into the oven for 25-30mins
