Cheddar Scallion Cupcakes with Whipped Cream Cheese
- 2 cups Flour
- 1 tablespoon baking powder
- 1.2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1/2 stick butter melted
- 1 cup shredded cheddar
- 1 cup sour cream
- 1/2 cup chopped scallion
- 4 oz cream cheese whipped
Mix together flour, baking powder, baking soda and salt.
Add eggs, melted butter, and cheddar. Beat until combined
Add sour cream and scallions and mix until the mixture is light and fluffy
Drop by spoonful onto an greased small muffin pan.
Bake at 400F for 15 minutes or golden brown.
Top cupcakes with a dollop of whipped cream and sliver of scallion cut along the diagonal
