  • 1 bunch flat-leaf parsley minced
  • 6 gloves of garlic minced
  • 1 medium shallot minced
  • 2 dried arbol chilis finely chopped
  • 1/4 cup red wine vinegar
  • 3/4 cup olive oil Juice of half a lemon
  • 1 tsp black pepper
  • 1/2 tsp kosher salt


  1. Combine all ingredients in a bowl except for olive oil.

  2. Slowly drizzle in oil while whisking the herb mixture.

  3. Serve immediately or cover and chill, stirring before serving.
