Chocolate Pomegranate Cupcake

Ingredients

  • 1/3 cup plain flour
  • 1/4 tsp baking soda
  • 2 teaspoon baking powder
  • 3/4 cup cocoa powder
  • 1/8 tsp salt
  • 3 tbsp butter
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 tsp vanilla extract
  • 1 cup milk
  • 1/4 cup pomegranate
  • 1/2 cup butter
  • 8 oz cream cheese
  • 2 cup icing sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees

  2. Line a muffin pan with paper

  3. Sift together the flour, baking powder, baking soda, cocoa and salt

  4. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, stir in the vanilla.

  5. Add the flour mixture alternately with the milk, then add the pomegranate. Beat well then fill the muffin cups 3/4 full.

  6. Bake for 15 minutes.

  7. For the icing, make sure to whip up the butter and cream cheese until completely smooth and creamy. Then add in the sugar

  8. The pink icing is a result of adding some pomegranate juice. The icing was a pretty colour but it didn't taste too much of pomegranate! The icing ended up with a hint of pomegranate.
