Chorizo, Chicken & Spinach Rissotto

Ingredients

  • 1/2 Red Onion
  • 1 Clove Garlic
  • 100 g Chorizo Sausage
  • 2 Large Chicken Breast
  • 1 cup Rissotto Rice
  • 1/2 Cup White Wine
  • 1 1/2 Pint Chicken Stock
  • 1 pinch Salt
  • 1 pinch Pepper
  • 50 g Parmesan Cheese
  • 2 handfuls Baby Spinach
  • 1 Knob Butter
  • 1 handful Rosemary (finely chopped)

Instructions

  1. Dice the Onion, Garlic and rosemary. Add to large pan and fry.

  2. dice up the chicken

  3. Skin and dice the Chorizo

  4. Cook for 5 minutes

  5. Add in the rice

  6. Cook for 2 minutes

  7. Add the wine and stock

  8. Cook for 20 Minutes

  9. Add the spinach

  10. Cook for 1 min

  11. Add the butter

  12. Leave to rest for 5 mins

  13. Add Parmesan and stir

  14. Serve
