Cranberry Orange Muffins

Ingredients

Muffins:

  • 1 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 2/3 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp orange peel
  • 1 cup cranberries

Topping:

  • 3 tbsp plain flour
  • 2 tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 2 tbsp butter

Icing:

  • 1/3 cup icing sugar
  • 2 1/2 tsp orange juice

Instructions

  1. Preheat oven to 350°F. Grease 8 muffin pan cups.

Topping:

  1. In small bowl, stir together flour, brown sugar and cinnamon.

  2. Add butter, stirring, until coarse crumbs are formed.

  3. Cover with towel and store to one side

Muffins:

  1. In a large bowl, stir together flour, sugar, baking powder, baking soda, cinnamon, and salt.

  2. In a small bowl, using a wire whisk, lightly beat egg, milk, oil and orange peel.

  3. Stir into flour mixture just until combined. Stir in cranberries.

  4. Divide batter among prepared muffin cups. Sprinkle reserved streusel topping evenly over muffins. Bake 20 minutes or until a toothpick inserted in center comes out clean. Remove from muffin cups..

Icing:

  1. In a small bowl stir together icing sugar and orange juice.

  2. Drizzle over warm muffins.

  3. Garnish muffins with extra grated orange peel if desired.
