Creamy Lemon Curd

  • 4 lemons
  • 2 eggs
  • 4 egg yolks
  • 200 g caster sugar
  • 60 g butter


  1. Zest lemons and place in a bowl, Juice the lemons and put to one side

  2. Place a saucepan of water on the stove and rest a bowl over the saucepan. The water should not touch the bowl.

  3. Beat the eggs and sugar together with a mixer until light a foamy.

  4. Add the lemon juice and the butter.

  5. Stir the mixture slowly and continuously.

  6. The mixture will start to change consistency and becomes thicker. When this happens take the bowl off the heat and put the mixture through a sieve.

  7. Add the 2 tsp zest to the mixture and stir well.

  8. Transfer the mixture into jars, clean the rim and seal immediately.

  9. The curd will stay fresh for a couple of weeks maximum if stored in the fridge.
