Cross buns

  • 250 ml Milk whole
  • 250 g wholemeal bread flour
  • 50 g Butter unsalted
  • 1 7g Easy bake yeast sachet
  • 1 tsp Salt
  • 250 g white bread flour
  • 1 Orange zest
  • 50 g Unrefined golden caster sugar
  • 1 Egg
  • 1 tsp Mixed spice
  • 100 g Raisins or sultanas
  • 1 Egg glaze
  • 50 g Shortcrust pastry to finish


  1. Put the flour, sugar, spice, yeast and salt into a bowl. And mix it roughly by hand

  2. Proceed to mix in the butter, milk and egg until a nice smooth soft dough is formed.

  3. Mix in the zest of the orange. Optional add in the dried fruit of your choice

  4. Put the dough onto a floured surface so it does not stick everywhere and knead for 10 minutes .

  5. Put the dough in a large bowl with enough space to rise, cover the bowl with tea towel and let it rest for a hour.

  6. Preheat the oven to 200°C (180°C fan, gas mark 6). Divide the dough into 8 equal pieces and shape then place on a lightly floured baking tray.

  7. Make a cross into the buns and brush egg wash equally over the surface. Bake for around 15 minutes or until it is a golden color
