Gazpacho

Servings 4

Ingredients

  • 2 lbs tomatoes
  • 1/2 cucumber
  • 1/4 red onion
  • 10 oz red peppers
  • 1 stalks of celery
  • 1/2 green bell pepper
  • 1/2 lime Juice
  • 3 tablespoons sherry vinegar
  • 1 cup tomato juice
  • 1 cup ice
  • 4 tablespoons olive oil
  • 4 teaspoons sweet paprika
  • 2 garlic cloves
  • 1/2 teaspoon cumin
  • Salt
  • Pepper

Instructions

  1. Dice everything up

  2. Put everything in a blender EXCEPT the cucumber and celery

  3. Blend the hell out of it

  4. Then add the cucumber and celery

  5. Blend the hell out of it again

  6. Add as much salt and pepper as desire

  7. Chill your gazpacho for 2 hours
