Goulash Soup

  • 100 g lean bacon
  • 500 g beef steak
  • 500 g onions
  • 60 g oil
  • 40 g smoked paprika powder
  • 5 tbsp vinegar
  • 1 litre vegetable stock
  • 500 g potatoes
  • 1 tbsp tomato purée
  • 1 tbsp ground caraway seeds
  • 2 cloves garlic


  1. Heat oil in a wide, heavy-based pot. Fry the bacon until starting to brown. Add the onions and sweat until browning. When the liquid forming has evaporated, add the meat, fry until it has sealed (turned pale), stir in the paprika, cook for about 2 minutes, then deglaze with the vinegar.

  2. Add the tomato purée, vegetable stock, garlic and condiments and cook for 40 minutes over a low heat. Keep stirring so it doesn't stick to the bottom of the pan.

  3. Add the potatoes, cook for 5 to 10 minutes, until the potatoes are soft.
