- 1 cup diced tomatoes canned tomatoes that have been drained work great)
- 1 cup finely chopped mango
- 1 cup finely chopped red onion
- 1 cup roughly chopped cilantro leaves
- 1 Tablespoon fresh lime juice
- 1 small Jalapeno chile pepper minced (seeded or partially seeded, depending on heat preference)
- 1/2 teaspoon salt
Combine all ingredients in a large bowl and stir well to combine.
Taste and adjust lime juice and salt, if necessary.
