Smoked Salmon & Avocado Sushi
- 300 g sushi rice
- 2 tbsp rice vinegar
- 1 tsp caster sugar
- 1 large avocado
- ½ lemon
- 4 sheets nori seaweed
- 4 large slices smoked salmon
- 1 bunch chives
- Soy sauce
Place the rice into a suacepan and fill with water until rice is slightly covered.
Bring the rice to boil and cook for 10 minutes (check packet instructions). Cook until the water has been absorbed. Stir in the vinegar and sugar, then cover the rice and allow to cool.
Skin, stone and slice the avocado into thin pieces.
Dice up the chives and put to one side.
Divide the rice up for each nori sheet and spread evenly leaving a slight border around each edge.
Place a slice of salmon on each sheet.
Sprinkle with lemon juice.
Place a couple of slices of avocado in the middle of the sheet, then sprinkle with chives.
from the bottom of the nori sheet, roll up to the top. Dampen the top border to help it stick to the rest of the sheet.
Using the wet knife, cut each roll into 8 pieces.
Serve with soy sauce.
