Watermelon Salad with Feta and Mint

  • 6 cups watermelon
  • 1/2 cup very thinly sliced red onion
  • 1/2 cup finely chopped mint
  • 2 Tablespoons lime juice
  • 1 Tablespoons olive oil
  • 2 arugula
  • 1-1/3 cup crumbled Sheep's milk feta


  1. In a large bowl, combine the watermelon, onion, and mint. Add the lime juice and olive oil and toss well to coat.

  2. Scatter the arugula on a large platter, if using. Mound the salad on top of the bed of arugula. Sprinkle the feta on top and garnish with mint leaves, if using.
