Lemon curd with ginger
- 1 ball stem ginger in syrup finely chopped, plus 1 tbsp syrup
- 75 g mascarpone
- 4 tablespoon icing sugar
- 250 ml double cream lightly whipped
- 8 tablespoon lemon curd
Start by beating In ginger syrup, mascarpone and icing sugar together until the entire mixture is smooth.
Whip up the cream lightly, then stir through the lemon curd with a fork so it is streaked.
When serving divide between 6 glasses and top it off with the chopped stem ginger.
