- 1 kg Salmon
- 1 red pepper
- 1 green pepper
- 1 red onion
- 4 cloves garlic
- 3 tsp cumin
- 3 tsp turmeric
- 1 tbsp tomato puree
- 1 can chopped tomatoes
- 10 tomatoes
- 2 tsp Jalfrezi paste
- 1/2 tsp Salt
- 1/2 tsp pepper
- 1 tbsp ginger
- 2 lime
- 2 tsp chilli powder , optional
Prepare the Salmon into small-medium chunks.
Chop the onion and peppers into medium chunks
Take a couple of the chunks of onion and finely dice them
Juice the limes
Chop the tomatoes into small chunks
Put a deep sided pan onto a medium heat. Add some oil to the pan and start cooking the onions and garlic for a few minutes.
Mix the salt, pepper and turmeric together in a small bowl. Then take the Salmon and coat it in the mix. Once evenly coated add the Salmon to the pan and fry for 10-15 minutes, until golden.
Add the tomato chunks, chopped tomatoes, Jalfrezi paste, peppers, ginger, lime juice, turmeric to the pan, taking care to stir.
Turn down the heat to a simmer, pop on a lid and leave to cook for 25-30 minutes.
Check the mixture occasionally and add a tsbp of water if required.
Serve with rice.
