- 450 g linguine
- 6 strips bacon
- 4 egg yolks
- 1 cup grated Parmesan
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup parsley
Cook the pasta in boiling water until soft. Drain the pasta, put back into the pan with a light drizzle of oil. Stir the oil and the pasta, this will stop it from sticking together.
While you are cooking the pasta heat up a frying pan with a tsp of oil. Slice up the bacon and fry it. When cooked, wrap in some kitchen towel to drain the oil.
in a mixing bowl whisk the egg yolks. While whisking, add a tsp of the oil from the frying pan. Add the pasta and parmesan to the mixture. Toss together.
Add the salt, pepper, bacon and parsley.
