Sweet Potato Oven Fries
- 1 kg sweet potato
- 2 tbp sunflower oil
- 4 tbp yoghurt
- 1 tsp curry powder
- 2 tbp mayonaise
- sea salt
Preheat oven to 200c
Peel the sweet potatoes and cut them into thick strips. Use a baking tray covered with baking paper, spread the sweet potato strips out and sprinkle the sunflower oil over them.
Bake the fries in the oven for 45 min until there golden brown. Make sure you flip the fries after 20 minutes.
For the dip sauce, start off with a small bowl and put the yogurt, mayonnaise and curry powder in. Mix it together until well blended. You can adjust the flavor with salt or pepper.
When the sweet potatoe are done take them out and sprinkle them with sea salt. Serve with the curry dip on the side.
