Sweet Potato with Egg

  • 4 big sweet potato
  • 60 g goat cheese soft
  • 4 small eggs
  • 2 spring onion


  1. Preheat oven to 200c

  2. Wrap each potato in aluminum foil and place it in the oven for 40 min.

  3. Take the potatoes out and open up the foil on one side and cut open the potato length wise. Then with a small spoon hollow out the core.

  4. Cut the goat cheese in small pieces and put them in the hollowed out core of the potato.

  5. Break one egg into each hollowed out core.

  6. Dice the spring onions finely and sprinkle them on top of the gap of the potato

  7. Put the potatoes back into the oven for another 20 min.

  8. Best eaten with a spoon!
