Zucchini Bread

Home made zucchini bread. You can substituted sugar for lite maple syrup to cut down further on the sugar content.

  • 1/3 cup maple syrup lite
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 2 teaspoon vanilla extract
  • 1 teaspoon Molasses
  • 1 3/4 cup Whole Wheat Flour
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 cup Unsweetened Applesauce
  • 1 Medium Zucchini grated


  1. Preheat oven to 350°F. Grease/nonstick spray an 8x4 loaf pan and set aside.

  2. In a large bowl, stir together the flour, syrup, baking powder, baking soda, salt, cinnamon, and nutmeg

  3. Add in the eggs, applesauce, vanilla extract, molasses, and grated zucchini and stir until all the ingredients are just incorporated.

  4. Scrape the batter into the prepared loaf pan and bake in the oven for about 40 minutes, or until a toothpick inserted in the center comes out clean.

  5. Let cool before cutting into slices.
