Zucchini Salad

  • 1 pound zucchini cut as thinly as possible
  • 2 Tablespoons lemon juice
  • 3 Tablespoons olive oil
  • 2 garlic cloves smashed
  • salt and pepper
  • 3 Tablespoons chopped fresh basil


  1. Place the zucchini, lemon juice, olive oil and garlic in a medium to large bowl. Season generously with salt and pepper.

  2. Cover and let marinate in the refrigerator for several hours or overnight. Just before serving, taste and adjust the salt and pepper and garnish with fresh basil.
